Chocolate Chip Cookie Dough Cheesecake Bars

This is probably the best dessert I have ever made and according to my husband comes in second place to my Dirt Cake! Here is what you will need:


For the Graham Crumb Base Layer:

  • 1 ½ cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 tbsp sugar

For the Cheesecake Center Layer:

  • 8oz. Block Cream Cheese
  • 1/3 cup sugar
  • 1 egg
  • 1 tsp vanilla extract

For the Cookie Dough Topping:

  • 1/3 cup butter
  • ¼ cup white sugar
  • ¼ cup light brown sugar
  • 1 tsp vanilla extract
  • ¾ cup flour
  • Pinch of salt
  • 2/3 cup chocolate chips

To begin you will want to start with the gramham crumb base layer. Smash your gramham crackers into a fine dust. Then add melted butter and sugar. 

Take this mixture and press firmly into the bottom of a greased or parchment paper lined 9x9 inch pan.

I didn’t have a 9x9 inch pan so I used a 9 inch pie pan instead.

Bake for 5 minutes at 325 degrees.

Next in a new mixing bowl you will want to cream together the cream cheese & sugar for the cheesecake layer. Then add the egg and vanilla extract and blend well.

Spread an even layer of this mixture over the graham crumb crust once its done in the oven.

Next layer for the Cookie Dough Topping you will want to cream together the butter, white sugar, brown sugar and vanilla extract.

Mix in the flour and salt.

Fold in just until dough begins to form and then add in chocolate chips. Press dough into a ball.

Break off small nuggets of the dough and place on top of the cheesecake layer. I also chose to add a few extra chocolate chips!

Bake at 325 for 30-35 minutes or until the cookie dough just begins to brown. 

Let cool completely in the pan. Place in fridge for at least 30 minutes after cooling so it can harden up a little. Then cut up and serve with a drizzle of chocolate syrup!
